Grilled Beef Strip Protein Bowl

Ingredients
- (2) Beef Fajita Strips (1 lb)
- (1, sliced) Large sweet onion
- (Seeded and sliced) Red, or other bell pepper
- (1 pound, trimmed) Asparagus
- (To taste) Plain Greek yogurt
- (To taste) Grape or assorted tomatoes
- (1 tsp: garlic powder, onion powder, black pepper, kosher salt, dried thyme, dried oregano) Seasoning blend:
- (Several leaves, chopped as garnish) Fresh mint
- (1/2 bunch, chopped (or 1/2 C) as garnish) Fresh flat leaf parsley
- (Sliced, as garnish) Cucumber
Directions
Some of the best recipes are ones that cater to what is seasonal, on-hand, and what you feel like eating at the time.
This particular recipe takes the popular grain bowl and piles on easy to find fresh, grilled veggies, cool Greek yogurt for added protein and a bit of zest, crumbled feta or Chevre, and of course- our quick cooking Beef Fajita Strips.
This recipe would also be a hit if you instead used our ground round and depending on what type of grill you had- you could still prepare it outdoors!
To make preparation faster, prepare your grill ingredients ahead of time and have at the ready because our beef strips cook up quickly!
Preparation
Add the thawed beef to a grill at medium heat.
Dust meat completely with the seasoning blend.
Move cooked meat to the side and allow to continue to warm while you cook the veggies just until crisp.
Serve directly from the grill or remove meat and cooked vegetables to a serving platter.
Assembly
Start with a cooked grain — pictured is steamed, brown basmati rice.
Top with grilled veggies, cooked beef, garnishes of your choice and- a healthy meal is on your table in under an hour!
